Chocolate Covered Blueberries
Servings: 12 servings
  • 4 ounces fresh blueberries about 3/4 cup
  • 2/3 cup dark chocolate chips
  • 2 tablespoons sweetened shredded coconut
  1. Wash and completely dry the blueberries. Set 12 muffin cups on a plate or tray. Place 6-7 blueberries in the bottom of each muffin cup. Place the chocolate in a glass dish, heat in the microwave for 90 seconds at 50% POWER. Stir and heat an additional 30 seconds at 50% POWER, if needed. Stir to finish dissolving the chocolate.
  2. Spoon the melted chocolate over the berries. Lightly spread the chocolate over the berries with the back of a spoon. Sprinkle with coconut. Place in the refrigerator for 30 minutes, or until the chocolate has set firm. Enjoy!

If you'd rather not use the microwave, you can also melt the chocolate in a double boiler, or a glass bowl over a simmering pan of water. The chocolate covered berries may be stored in an airtight container and kept in the refrigerator for up to 3 days.
