Fresh watermelon, frozen strawberries and sweet basil combined to create one of the most refreshing drinks I’ve ever made. I am glad that I finally gave in to my son’s weekly request for watermelon.
I bought a small one, expecting it to be still lacking in flavor this early in the year, but it was delicious! We had about half a melon left in the refrigerator and I decided to try it in a smoothie.
I will caution you that if your watermelon is not a truly ripe and flavorful, it will not make a good smoothie at all. Trust me on this, I tried using a less than delicious melon in a smoothie last year.
The coconut water is there for just a hint of coconut flavor, you could probably leave it out and the watermelon would produce plenty of liquid for the smoothie.
After the surprising flavor pairing of strawberry and basil earlier this week, I could not resist trying a bit of basil in this smoothie. The basil was not overpowering at all, feel free to add more if you like. I wanted just a small amount of basil flavor and this did it for me.
I wasn’t sure what my boys would think, seeing how their dad was not a fan of the basil strawberry combination. Fortunately, they inhaled these drinks. The older boys both commented that this tasted different from what they expected, but that they really liked it.
Watermelon Strawberry Basil Smoothie
Ingredients
- 6 cups of ripe watermelon chopped into chunks
- 8 frozen strawberries
- 1/2 cup coconut water
- small handful of fresh sweet basil about 10 leaves
Instructions
- Place all ingredients in the blender and puree until smooth. Enjoy!
