Potato Pancakes recipe by Barefeet In The Kitchen

This morning I spied a container of leftover mashed potatoes in the refrigerator and decided to try a very simple version of potato pancakes. They turned out great and my boys and I enjoyed them for breakfast along with some eggs and fresh fruit.

They were especially tasty when topped with some pear sauce that I had in the pantry. I’ll share the pear sauce recipe this fall when pears are in season. Apple sauce would be every bit as delicious with them, if you happen to have it.

As soon as the pancakes browned on the first side they flipped easily, without any oil at all. The trick is not to mess with them once you have dropped them onto the griddle and flattened them slightly.

Potato Pancakes

Servings: 16 -18 pancakes

Ingredients 

  • 2 cups leftover mashed potatoes
  • 2 eggs
  • 1/4 cup cornstarch or arrowroot AP flour would probably work fine as well
  • pinch of salt should not need much because the potatoes are already flavored

Instructions

  • Using a couple tablespoons of the mixture at a time, drop the pancakes onto a hot griddle. Flatten them out a bit, using the back of a large spoon and let them cook until browned. Flip them over with a spatula and press down slightly. Cook the second side until browned. Remove from the griddle and serve warm. Top with apple sauce or pear sauce if desired. Enjoy!

    My mom always made potato cakes with left over mashed potatoes when we were young. She would add finely diced onion, dip the cake in an egg wash and then in flour. The middle was creamy and hot with a crisp outside. I remember them well. Yum!

    Latkes always seem like too much trouble to me to actually make….I'll reap the benefits of someone else frying them! These sound majorly delicious though…I think I'll have to whip up some mashed taters just to make these!

    I attempted latkes once… they weren't bad, but I made them a bit too thick and they were sort of raw in the middle. This looks like a much easier way of doing them!

    We visited friends in Florida once that threw together an awesome potato pancake with leftover mashed and other things. I've often wished I could duplicate them. (The shredded latkes intimidate me, I feel like they'll never hold together.)

    I have never made latkes but yours look very tasty. I like the idea of baking them like pnacakes and not fry them. You save so much in calories!

    I love potatoe pancakes. I sometimes put diced onions and bacon bits into mine. After frying them I top them with Cheese and let it melt, a yummy variation when you don't want the sweet applesause. Goes great with a brunch.5 stars
