Originally posted two years ago, this Pineapple Mojito Fruit Salad was inspired by one of my all-time favorite drinks, the Pineapple Mojito. This simple fruit salad takes the flavors of the mojito and turns them into the perfect side dish to brighten almost any meal.
I’ve been dreaming up ideas for new summer side dish ideas and fruit salad recipes and as I was falling asleep one night, I remembered those Pineapple Mojitos and started thinking about a way to turn them into a fruit salad.
Like many other recipes, one idea led to another and the next morning I found myself in the kitchen making this salad. To call it a success doesn’t even cut it. I LOVE this salad. It’s a mojito you can eat with a fork and you can call it breakfast.
I’ve been making this salad for a couple years now and it’s my go-to use for pineapple whenever it goes on sale. Naturally, when I saw a sale on pineapple last week, I thought of this recipe and decided to share it with you once more, in case you missed it last time! It is one that is well worth repeating.
Pineapple Mojito Fruit Salad
Ingredients
- 1 large pineapple cut into 1/2" pieces
- 6 mint leaves sliced into very thin strips
- 1 lime
- Mint Simple Syrup:
- 1/4 cup water
- 1/4 cup sugar
- 1/4 cup packed mint leaves
Instructions
- Combine the water and the sugar in a small saucepan. Bring to a boil and simmer just long enough for the sugar to dissolve. Remove from heat. Place the mint leaves in a small glass bowl or measuring cup. Pour the hot syrup over them and let sit on the counter until cool.
- Place the pineapple in a large bowl and drizzle with the mint simple syrup, pressing the leaves to remove as much of the syrup as possible. (Discard the wilted mint leaves.) Add the fresh mint leaves and stir to distribute. Squeeze a lime over the pineapple and stir again. Chill until ready to serve. Enjoy!

Love to see all these fresh pineapple recipes. FYI-Costco has fresh pineapple spears in the freezer- also great for adding seasoning and taking to backyard party for grilling.

I take a lot of fruit trays/fruit salads to potlucks and group gatherings and the last time I did so, I spent over $30 to make a 9×13 deep dish filled with fruit. Eek, don’t get me wrong, it’s good, but I wanted an alternative. Fresh pineapple has been very well-stocked and very reasonably priced where I am lately, so I made this as a trial–and we LOVED it! The addition of the simple syrup, mint and lime juice really make this special! I could make the same large quantity of this simpler fruit salad for about $10, but it still feels very special (and the leftovers hold up better being just pineapple). Great recipe–I think I’ll be making it on repeat this summer.
After tasting it exactly as recipe stated, I ended up adding the zest of a lime for extra lime flavor–purely personal preference.
