Peppermint Mocha Ice Cream

Creamy peppermint with hints of mocha and chocolate is like having all of your favorite holiday treats frozen together. Ice cream isn’t just for summer! My ice cream maker gets a year-round workout as I churn our favorite flavors of that season together.

I’ve heard people say that when trying to mix cocoa powder into milk or cream it can be lumpy or hard to get smooth. Let me help you with that.

When using cocoa powder and sugar together in a recipe, a trick I learned a long time ago is to whisk the cocoa powder together with the sugar.

Peppermint Ice Cream Recipes

Once the cocoa powder and sugar have been smoothly combined add the cream and milk, and warm through. Keep whisking so the sugar and cocoa powder can dissolve.

Add the vanilla and peppermint extracts when you remove the cocoa milk mixture from the heat. Let the mixture cool to room temperature before pouring it into the ice cream maker.

Peppermint Mocha Ice Cream Recipe

Ingredients 

  • heavy cream
  • whole milk
  • sugar
  • cocoa powder
  • kosher salt
  • vanilla extract
  • peppermint extract

Instructions

  1. Combine the cream, milk, sugar, cocoa powder, and salt in a small saucepan. Warm the mixture over medium heat, whisking frequently, just until the sugar and the cocoa dissolve. Remove from the heat and add the vanilla and peppermint extracts. Stir to combine and cool to room temperature.
  2. When ready to churn, whisk the mixture again, and pour the mixture into the ice cream maker. Churn according to the manufacturer’s instructions.
  3. Transfer the finished ice cream to an airtight container and place it in the freezer until ready to serve. Serve with chocolate shavings on top, if desired.

    A very good ice cream recipe – I have loved all the ice cream recipes on here so far. A couple of comments – it might be fun to add some crushed candy canes or peppermint bits to this to increase the peppermint a little bit. Also as a frequent ice cream maker, it really helps to add 1-2 TB of alcohol to each ice cream batch – this helps keep the texture creamy and stop it from forming hard ice crystals after a day or two. For this I used Creme de Menthe but other peppermint liqueurs would work as well.4 stars

    I didn’t think the taste was quite ‘deep’ enough in this recipe. Next time I would add more peppermint and perhaps more cocoa powder. Or maybe go with more of a chocolate base and then add the peppermint in rather than vice versa.3 stars
