Peanut Butter Banana Ice Cream recipe by Barefeet In The Kitchen

Ice cream with just two ingredients. How could I resist trying this? I thought it might be overwhelmingly banana flavored, but surprisingly, it was not. This actually tasted like ice cream.

The texture was amazingly smooth and creamy, much smoother than homemade ice cream typically is, and the flavors were a great combination.

The kids really loved it and I was excited to be able to hand them all such a healthy treat. Ice cream for the kids with no added sugars or sweeteners? That is a serious win in my book! The boys have already requested it again.

Peanut Butter Banana Ice Cream

Recipe adapted from and with thanks to The Kitchn
Servings: 4 servings

Ingredients 

  • 6 bananas not overly ripe
  • 4 tablespoons peanut butter

Instructions

  • Slice the bananas into 1/2"-1" pieces. Place the banana pieces in the freezer for 1-2 hours. (Do not try this with bananas that have been in the freezer overnight. Learn from my mistakes!) In a food processor or a very powerful blender, puree the frozen banana chunks. Scrape down the sides of the bowl as needed and continue blending until smooth. Once the bananas have turned into ice cream, enjoy as is or add the peanut butter for a truly amazing treat. This is an excellent soft serve ice cream straight out of the food processor.
  • You can freeze it further, simply by placing the ice cream in your freezer once it is smooth. This will result in a firmer, yet still scoop-able ice cream within a few hours.

    I use frozen bananas and peanut butter with a scoop of EAS Vanilla Whey protein Powder in my food processor and it is like ice cream.

    I make a strawberry banana "ice cream" treat for myself every day, I make it using my Ninja. I put one frozen sliced banana and some skim milk in the container (I don't measure the milk, I use as much or as little as I want) and blend them together. Then I add unsweetened frozen sliced strawberries into the container (I probably add about 6 whole strawberries worth of slices) and blend it all together. So good!
