Merry Christmas! I’m taking a blogging vacation from now until the first week of January. I’m going to curl up on the couch, read as many books as I can, make our favorite recipes without taking a single picture, find some snow to play in, and watch lots of movies while snuggled into warm blankets. Family will be visiting and there will be plenty of board games played at night. I plan to enjoy every single moment of my favorite two weeks of the year!

Perfectly Simple Roast Chicken – Now that I’ve finally figured out that roasting a chicken isn’t rocket science, I’ll be roasting a couple of birds over the holidays. It’s the perfect meal to double and plan to use the leftover chicken for a couple more meals.

Chicken Cordon Bleu Eggrolls – Speaking of leftover chicken, this is an excellent way to use it. I haven’t made these eggrolls in over a year and I can hardly wait to make them next week!

Five Twists on Classic Deviled Eggs – Our tradition is to do a night of appetizers for dinner while we watch movies on New Year’s Eve. These eggs with fillings like fresh guacamole, bacon and ranch, chipotle and lime hummus, horseradish and dill, and cheesy Sriracha are going to disappear fast!

The BEST Queso Blanco Dip – Creamy, spicy, perfectly smooth and cheesy dip just like they serve at your favorite Mexican restaurant. This has already been requested by all three of my kids. They devour it in minutes every time I make it.

Spinach and Potato Breakfast (or Dinner!) Skillet – This recipe has been a favorite for over two years now. I make a version of this for breakfast or for dinner at least once a month and there is never a bite leftover!

New Mexican Posole – I’m planning to make this soup and a fresh batch of Red Chile Sauce on Christmas Eve. I’ll be doubling the recipe to be sure to have leftovers later in the week too.

Italian Red Wine Pork Roast – I put everything in the crock-pot first thing in the morning and the house smells amazing all day long. The pork falls apart and is tender enough to cut with a fork. The recipe makes a huge amount, so plan on leftovers or make a half recipe.

Roasted Italian Apples and Potatoes with Pork – Speaking of leftovers once again, this is a fantastic way to use some of that Italian Pork Roast. I haven’t made this is ages, so it’s on the menu too!

Roasted Brussels Sprouts with Apples and Bacon – Salty bacon, sweet apples and caramelized Brussels sprouts combine to make one of the most outstanding side dishes you can imagine. Brussels sprouts haters be warned, this recipe just might change your mind about those little green vegetables!

Layered Lemon Cheesecake with Brown Sugar Almond Crust – This is one of the best cheesecakes I’ve ever tasted and it has been requested for Christmas Day. I’m thinking about doing a cranberry or blueberry topping this time. I can hardly wait!
