Meat Lover's Fried Rice

This is the ultimate meal for leftovers, as you can easily adapt it for whatever meats you have on hand.

I’m a gigantic fan of meals that repurpose leftovers into something awesome and new. Pulled Pork Breakfast Hash and Skillet Crisped Carnitas are perfect examples of using leftover Pulled Pork for a whole new meal.

You’ve seen it over and over with recipes for fried rice. I think fried rice is my go-to way to remake leftovers, as you can add in proteins, vegetables, and leftover rice too.

Meat Lover’s Fried Rice

You’ll need 4-5 cups of cooked meat to add to the rice. The sky’s the limit here.

If you’re lucky enough to have shrimp in the house, Shrimp Fried Rice is a personal favorite. Use a rotisserie chicken from the store or some leftover grilled chicken thighs.

I used leftover carnitas, steak bites, and shredded chicken to pull this recipe together. It’s a great starting point for all kinds of great combinations.

I’m dreaming of a Beef Lover’s Fried Rice now too. Wouldn’t this be amazing with steak bites, taco beef, and roast beef??

Cooked and crumbled bacon, about 1 lb uncooked, can be substituted for the pulled pork in this recipe if it is not available. Kielbasa can also be substituted.

Ground beef may be substituted for the steak, if steak is unavailable.

Meat Lover’s Fried Rice Recipe

  1. Warm a tablespoon of bacon grease, or oil, in a large nonstick skillet over medium heat. Swirl the oil to coat the surface of the pan. Pour the eggs into the pan and tilt as needed to spread across the skillet.
  2. Let the eggs cook for 2-3 minutes and then flip them over, like a giant pancake. Cook one more minute. Slide the egg out of the skillet onto a cutting board and allow it to cool. Cut into 1/2-inch wide strips and then cut into small pieces. Set aside.
  3. Add the remaining tablespoon of grease, or oil, to the skillet and increase heat to medium-high. Add the rice and stir to coat. Continue stirring and cooking for about 2 minutes.
  4. Add the soy sauce and sesame oil. Stir well, to distribute the sauce throughout the rice. Cook for 5 minutes, stirring frequently, until the rice is heated through.
  5. Add the peas, pork, chicken, and steak. Stir and cook an additional 3-4 minutes, until everything is hot. Add the eggs and green onions to the skillet. Taste the rice and add pepper and/or salt, as needed.

Tips for Making Fried Rice

The rice for this recipe needs to be completely chilled so that it can be easily broken apart into individual grains without any clumping or sticking.

I suggest making the rice a day or two (even as much as 4-5 days) before you want to use it. The key to great fried rice is using rice that is as dry as possible so that your fried rice won’t be mushy or soft.

I use Jasmine rice 100% of the time in my cooking. However, any long grain rice will work for this recipe.

Meat Lover’s Fried Rice

Best. Leftovers. Ever. Pulled pork, steak, and chicken come together in the fried rice skillet of every meat lover's dreams.

Servings: 8 servings

Ingredients 

  • 2 tablespoons bacon grease, or the oil of your choice, divided
  • 3 eggs, lightly beaten
  • 5 cups COLD cooked rice *
  • 1/4 cup low-sodium soy sauce, plus more for serving
  • 1 tablespoon sesame oil
  • 1 cup frozen peas
  • 1 1/2 cups cooked pulled pork, chopped (and crisped in a hot skillet, if desired)
  • 1 1/2 cups cooked chicken, cut into 1/2-inch pieces
  • 1 1/2 cups cooked steak or steak bites, chopped or sliced thin into 1/2-inch pieces
  • 3 green onions sliced thin
  • 1/2 teaspoon freshly ground black pepper
  • optional: kosher salt only as needed.
