Welcome to the weekend, my friends! I’m staring out the window as I write this today, watching leaves fluttering through the air like falling snow. The way they are swirling outside today makes me wonder how there are any leaves left on the trees. Fall mornings never fail to make me smile.

ON THE BLOG this week: This creamy, rich slow cooker potato soup with a sprinkling of rosemary and thyme simmers in the crock-pot through the day, until you are ready to eat. I’ve been calling this my “Busy Day Potato Soup” for years. This Slow Cooker Potato Soup can be assembled and started in the crock-pot anytime from 5-10 hours before you want to eat.

The best Buttermilk Waffles are light and fluffy with a slight tang from the buttermilk. These waffles are a brunch favorite every time we make them. I’ve included both traditional and gluten-free recipes for these waffles, so you can make them with confidence using either all-purpose flour or the gluten-free flour blend.

Hearty Italian Vegetable Beef Soup is filled with chunks of ground beef, plenty of vegetables, and generous Italian spices. My husband carried one version or another of this soup to work with him for lunch at least a couple of times a week for years. The soup freezes beautifully and I almost always have a few servings tucked away for those lunches.

Have you heard of Pfeffernusse? These cookies are a popular holiday treat in Germany, Denmark, and The Netherlands. Pfeffernusse are small, round cookies filled with ground spices, molasses, and brown sugar. This is an unforgettable Christmas cookie.

What I’m CRAVING: These Apple Cinnamon Scones by Saving Room for Dessert are calling my name with their crispy sweet crust, chunks of fresh apple and loads of cinnamon chips.

My FAVORITE THINGS this week are these lightweight kitchen knives. (link HERE) I’ve been testing them out for a few weeks now and while lightweight knives aren’t usually my first choice, they are a solid knife option at this price point. I needed a backup set of knives and these have worked out nicely. (The brand sent them to me a while back to test out and I’m happily using them now on a regular basis.)

PROS: They’re very sharp, hold their edge nicely, and are comfortable to hold. CON: These really are lightweight knives. Honestly, that’s the only downside for me. I’ve been asked in the past for lighter-weight knife recommendations, so I’m passing this on for anyone interested.

What I’m WATCHING: Mrs. Doubtfire. It’s amazing to me that this movie still delivers laughter almost 30 years after it was made. The kids and I watched it the other night and it reminded me just how fantastic an actor Robin Williams was. We’re talking about doing a Robin Williams marathon soon.

What I’m READING: The Quiet Place: Daily Devotional Readings by Nancy DeMoss Wolgemuth. I own quite a few devotionals, but this is one of my favorites. I’m reading through it now, one day at a time, and I am getting so much from it.

This isn’t fluff or feel-good devotionals. This little book is filled with solid, Bible-based, daily readings that never fail to encourage me.
