Welcome to the weekend, my friends. I can hardly stop grinning as I write this today. Fall is FINALLY here! It’s still weirdly warm here in Ohio, but the leaves are changing and our world is pretty as pretty can be!

As Anne Shirley says, “I’m so glad I live in a world where there are Octobers.”

ON THE BLOG this week: Spinach Stuffed Shells are filled with creamy ricotta, mozzarella cheese, and spinach then baked in marinara sauce with melting cheese on top. Kids and adults love this dinner!

Layered Pumpkin Coffee Cake starts with a sour cream coffee cake that is layered with a creamy pumpkin filling and then topped with a crunchy cinnamon sugar and pecan topping. This is a wonderfully unique pumpkin dessert that’s perfect for any of your upcoming fall and winter gatherings.

Sweet and tender corn simmers in a rich cream sauce to make Crock Pot Creamed Corn. It is an unforgettable side dish like no other creamed corn I’ve ever tasted. My favorite thing about this recipe is that it is made in the Crock-Pot. No watching, no stovetop, no oven space required, no serving dishes taking space in the refrigerator. It takes me about two minutes to combine everything and start it cooking.

What I’m CRAVING: THIS Dill Pickle Pizza! There is a local place here in Ohio that serves a pickle pizza and I absolutely crave it. So, when I saw Rebecca’s recipe pop up the other day, I put it on my must-make list. If you like pickles and you like pizza, this is a combination you need to try asap.

My FAVORITE THINGS this week are these fantastic night lights. I ordered a six-pack of them (for less than $10!) and plugged them in around the house. LOVE LOVE LOVE them. Sean immediately asked me to order more for the basement. They’re the perfect amount of light in the middle of the night, you can not only adjust the brightness, you can select clear white light or a warm light. They are just such a terrific deal!

What I’m WATCHING: Stardust. This is a long-time favorite. We watched this last night for our family movie night and my youngest was able to watch it with us for the first time. He LOVED it.

Speaking of family-friendly (more than kids’ movies) options for movie nights, I am always up for suggestions there! If you have some favorites, send them my way. You never know, you might suggest something we haven’t seen or have forgotten.

What I’m READING: An Echo in the Darkness: Mark of the Lion Series by Francine Rivers. This is the second book in the trilogy and I am fully engrossed in the lives of these people once again. The first book takes a solid 100+ pages to really be drawn into it, but I couldn’t wait a day to open this one after finishing the first.

As I mentioned a few weeks ago, these books are some of my favorites by Francine Rivers. This trilogy is historical Christian fiction and they’re immensely thought-provoking reads –  with plenty of parallels between first-century Rome and our world today.
