Welcome to the weekend, my friends! We’re getting ready for our long road trip and I’m beyond excited about all of it. With all of the time at home last year, we’re all so very ready to hit the road.

Several people requested camping and road trip meal ideas last time we were out, so I’ll try to share some of what we’re eating each week in our newsletters. If I get motivated enough, maybe I’ll even put together a blog post.

ON THE BLOG this week: Crisp shortbread is layered with a gooey, sweet mixture of nuts and fruit topped with a crisp caramelized layer of brown sugar crust to make these irresistible Butter Tart Squares.

The Best Homemade Ranch Salad Dressing tastes better than anything store-bought and only takes a few minutes to make. Ranch dressing is delicious on salads and as a dip for fresh vegetables. There aren’t all that many recipes here on the blog that I label as “the best.” With nearly 1,500 recipes here, there are less than 20 that have earned that label.

I figure that everyone’s tastes are different and who knows if someone else’s opinion on the “best recipe ever” is going to match mine? This ranch salad dressing though? It is hands down the BEST Ranch Salad Dressing that I have ever tasted and everyone who tries it agrees.

What I’m CRAVING: This Avocado BLT with Fried Egg and Chipotle Mayo caught my eye this week and since I’m always craving BLT combinations (and I love chipotle mayo so much!), you know I’ll be making a version of this sandwich soon. 

Craving more BLT awesomeness? Try the BLT Pasta Salad or the BLT Corn Salad. Both of these are on my personal favorites list.

My FAVORITE THING this week is our Blackstone Griddle. I’ve been hearing about the Blackstone for a while now and finally bought a small one for while we’re on the road. We tried it out and LOVED it last month in MI. 

We actually loved it so much that we already bought a big one for at the house as well and we’ve been using it as often as possible. The griddles are everything they’ve been hyped to be. Consider me officially in the Blackstone fan club. They’re kind of hard to find in stock these days, so keep an eye out and grab one fast when you catch one available!

What I’m WATCHING: Clarkson Farm. This is a terrific reality miniseries, just 8 episodes, and I really wish there was more to watch. The learning curve of a first-time farmer had me laughing so hard at times. Jeremy Clarkson (formerly of Top Gear and The Grand Tour) is now working his farm in Chipping Norton in Oxfordshire and his personality could not be more perfect for this show. 

What I’m READING: The Screwtape Letters by C.S. Lewis. If you haven’t read this one before or haven’t read it recently, it’s well worth the time. Just 73 pages and certain to make you think, this is always a great read and re-read.
