Welcome to the weekend, my friends! Can you believe that summer is almost here? We had such an awesome time on our first long road trip and I am super excited for our summer plans this year!

Now I just need to line up my chicken loving house sitters for the summer. As much as I love all of those fresh eggs, the birds definitely throw a wrench in the planning!

ON THE BLOG this week: Bright, citrus ice cream with just a hint of banana, this is the ultimate creamy cold treat on a hot summer day. Six Three’s Ice Cream is the ice cream that I remember from summers spent at my grandparent’s house.

Filled with ground beef, pasta, peppers, and jalapenos, the Cowboy Pasta Salad is a hearty, spicy, pasta salad perfect for the meat-lover in your life. You can serve this pasta warm or at room temp for an easy lunch or dinner.

What I’m CRAVING: Anyone else love Mac and Cheese with Kielbasa as much as we do? My friend Jennifer’s recipe caught my eye this week and I immediately put it on our meal plan for the week. This combination is a kid-favorite here and Sean and I both love it too.

My FAVORITE THING this week is this cord organizer for travel. I was thrilled to discover the pouch is a little smaller than it looks in the photos and it’s PERFECT for my needs. I have my laptop charger, phone charger, memory cards, tiny card reader, and USB charger all in there and it isn’t a super tight fit. I’ve tried several bags for storing all of the cords and cables needed when traveling and this little organizer checks all of the boxes.

What I’m READING: Eight Cousins by Louisa May Alcott. Oh, how I loved this book as a child! I’m re-reading many of my childhood books and really loving the peek into the past. I enjoy the characters in this series so much.

    MY favorite reads on an e-reader are mysteries and thrillers fiction, history and I have a sizable amount of cookbooks on it. Probably because it’s a great fit on my counter in it’s stand.
