Welcome to the weekend, my friends! Remember how I was craving beef last week? Well, I’ve been chatting with my beef industry friends and I’m thrilled to tell you that I’m headed back to the farm this summer and I’ll be taking you all along for the ride. (I’m so excited!!!)

I’ve spent the past seven years learning more and more about what goes into getting the cattle from gate to plate. All of the time that I’ve spent with the experts in the beef industry, from scientists to the ranchers, has added up to a whole lot of learning and many experiences that I will never forget.

The people that work the ranches and care for these animals are my kind of people. Their love for family and their love for the land and the cattle they care for defines them.

I’ll be meeting up with a local cattle rancher later this month and bringing my boys along for the fun too. You can bet I’ll tell you all about it, along with sharing some deeeeelicious new beef recipes! My mouth is literally watering, just thinking about it now.

Side note: HOW has it been that long since our first trip to Wooster, OH? That was my first introduction to my beloved Ohio. 

ON THE BLOG this week: Strawberries, blueberries, and bananas are tossed with a light, creamy dressing for this fun and flavorful Red White and Blue Salad. I would happily eat this any day of the year with breakfast, lunch, dinner, or dessert.

Coconut Cranberry Oatmeal Cookies have the crisp edges and soft centers that everyone craves. These cookies are loaded with coconut and cranberries and they’ve been a hit with everyone who tries them.

What I’m CRAVING: My friend Sue’s Wine Braised Short Ribs look AMAZING! I’m a big fan of creamy polenta too and the combination sounds fantastic.

My FAVORITE THINGS this week are these cloth napkins. These beauties are so much lovelier in person than they even look in the photo. They are a cotton blend that feels and looks like linen, but they washed beautifully! They really were such a great find.

What I’m READING: 21st Birthday by James Patterson and Maxine Paetro. This is the 21st book in the Women’s Murder Club series and it’s every bit as good as the rest. This has been one of my favorite series for over 15 years now and I eagerly anticipate each new book.
