Welcome to the weekend, my friends! If you’re hanging out with me on Instagram, you may have seen that we finally found a new home for our rooster. Our hens are so much happier now!

And speaking of Insta, if you’re there for more than the food, you can follow our daily life (and all the chicken fun!) over on my personal account @maryinohio.

ON THE BLOG this week: Green Chile Chicken Enchiladas in 30 minutes? Yes, it’s possible and this recipe is going to be a family favorite in no time at all. Gooey cheese, spicy green chile, and hearty chunks of chicken come together to make this easy dinner.

Chocolate Peanut Butter Ritz Cookies are the sweet, salty, chocolatey snack you need in your life. With zero baking required and just three ingredients–chocolate, Ritz crackers, and peanut butter–they’re a perfect last-minute dessert.

What I’m CRAVING: These Fish Tacos with Roasted Pineapple Salsa by A Farmgirl’s Dabbles look fantastic. I think I’ll be adding them to our menu soon.

My FAVORITE THING this week is this foaming bath with bath salts. You might also call this the “best smelling bubble bath ever that leaves your skin super soft.” As much as I love using these bath salts, there’s just nothing that beats bubbles.

What I’m READING: Rich People Problems by Kevin Kwan. The Crazy Rich Asians Trilogy has been as much fun to read the second time as it was the first time. My fingers are crossed that there will be movies made for the rest of the books.

Wishing you a beautiful week full of little things that make you smile!
