Welcome to the weekend, my friends! If you hang out with me on Instagram, you already know that we’ve spent our spring break on the Outer Banks and it was a fabulously relaxing trip. I am getting excited about our summer travel plans. (and should probably figure out our house-sitting / chicken-babysitting for those dates too!)

ON THE BLOG this week: Cheesy Hot Bean Dip is a hit for any occasion. This easy recipe can be made in the oven or in the crock-pot. Serve with all your favorite dippers for a knock-out appetizer or party food.

This Chocolate Almond Ice Cream is a rich and creamy, dark chocolate ice cream flavored with almonds and just the tiniest hint of cinnamon. The almond flavor is unexpected, but fantastic with the chocolate.

This Italian Pasta Salad with Tomatoes, Cucumbers, and Olives is a light and tangy salad that is potluck, party, and summer barbecue friendly, with no mayo or other ingredients to spoil in the heat. A light dressing keeps everything tangy and moist, while the pasta won’t dry out, even if it’s left on a table for a couple of hours.

What I’m CRAVING: Have you heard of Pizza Logs? Pizza Logs are crispy, crunchy egg rolls filled with gooey, melted mozzarella cheese and garlicky pepperoni. As soon as Rebecca shared them, they hit the top of my craving list.

My FAVORITE THINGS this week are my noise cancelling headphones. I’ve had them a couple of years now and while they’re admittedly a luxury purchase, I love them dearly. They are the best thing EVER for road trips with the family or for air travel. I tried several earbud style noise cancelling options and nothing at all compares with these.

What I’m READING: And He Dwelt Among Us: Teachings from the Gospel of John by A.W. Tozer – This book is a collection of highlights from sermons on the Gospel of John that were delivered by Tozer at his church in Chicago. Tozer has a gift for taking the most complex ideas and making them seem simple. He is an amazing teacher and I find myself reading and re-reading sections of the books.

What I’m WATCHING: Psych – I’d only seen a few random episodes of the show before and watching from the beginning has been fun – and good for plenty of laughs.
