Happy Easter, my friends! We say it every year, but time really is flying by so quickly. Here we are in April, ready for spring break, and making plans for summer. My whole family is looking forward to road-tripping and camping again – at last!

ON THE BLOG this week: Within a few months of moving to Ohio last year, my family was lamenting the fact that we no longer lived near a Cafe Rio. If you’ve ever lived near one of their restaurants and enjoyed their salads on the regular you may understand our lamentations at now living so far away from this deliciousness. Fortunately for all of us, it’s as easy as can be to make your own Cafe Rio salad at home!

This Cafe Rio copycat recipe for Creamy Tomatillo Salad Dressing is creamy, tangy, and just the teeniest bit spicy. It’s perfect for drizzling over salads or tacos, or for dipping fresh vegetables.

My Aunt Judy’s Almond Bars are tender, lightly sweetened shortbread-like bars that are so good, you’ll find yourself doubling the recipe every time you make them. The bars are topped with sliced almonds and an almond glaze – absolutely no one can resist them!

What I’m CRAVING: My friend Deborah calls this the Perfect Party Cake and I have to state that it’s pretty much the perfect cake for any reason at all. It’s a spectacular lemon cake layered with raspberry preserves and a velvety buttercream frosting that is covered in sweet coconut. What’s not to love???

What I’m WATCHING: Crazy Rich Asians – I read the book a couple of years ago and it was a whole lot of fun to see that the movie was every bit as good.
