Welcome to the weekend, my friends! I’m kind of weather obsessed these days and it’s making me happy every single day to see so much sunshine – and no snow on the grass. (I realize that by the time spring arrives I’m going to be unbearably weather obsessed. I’ll go ahead and apologize in advance.)

ON THE BLOG this week: Simple Rice Pilaf lets the simple flavors of garlic and onion shine. This easy rice recipe makes an ideal side dish for any main course. Served with Garlic Butter Steak Bites or Easy Baked Chicken Thighs, you’ll have an awesome dinner that everyone will enjoy.

Tender, buttery, lightly sweetened Almond Cake is a treat with a cup of coffee or tea in the afternoon, but it’s also a company-worthy dessert for any occasion. No frosting or complicated decorating is necessary for this simply perfect cake.

The classic Cheddar Cheese Ball is the snack everyone wants on their table for get-togethers and game nights. Served with crackers, pretzels, raw vegetables, or pretty much anything else that sounds tasty with cheese, homemade cheese balls are a winning snack for any occasion.

What I’m CRAVING: These Garlic Butter Mushroom Pork Chops by Crunchy Creamy Sweet look and sound absolutely divine.

What I’m WATCHING: The Rookie. As a long-time fan of Nathan Fillion, I’m surprised it took me so long to watch this one. I’m not typically a fan of most cop shows, but this one is fantastic. I loved Nathan Fillion’s character in Firefly and in Castle, but this? I think John Nolan (aka the 45-year-old rookie cop) is his best role ever. The first season was excellent and I’m looking forward to the next ones.

What I’m READING: Picture Perfect by Jodi Picoult. It’s been quite a few years since I read a Picoult book and (full truth in my reviews, right?) this one reminded me of why I quit reading her work. The book rambled a good bit and I struggled to finish it. The characters simply weren’t likable.

Despite the misses with some of her more recent books, I still love My Sister’s Keeper. It was the first Picoult book I read and it remains my favorite one of her books. I highly recommend that one.

What I’m LISTENING to: Bang! by AJR. This song. I can not stop listening to it. If you don’t already love it, just listen and try not to grin.

“Twenty years from now you will be more disappointed by the things you didn’t do than by the things you did do.” – Mark Twain

Wishing you a beautiful week full of little things that make you smile!
