Ohio 247

Welcome to the weekend, my friends! The sun is shining and the snow is melting at last. Prior to moving to Ohio, I never really understood the excitement over a sunshine-filled day. Living in Phoenix, that was just everyday life pretty much every day of the year. 

However, after three weeks of gray skies and piles of snow as far as I could see… my happiness knows no limits this weekend. I quite literally haven’t been able to stop smiling at all the glorious sunshine over the past couple of days.

ON THE BLOG this week: As a breakfast or as a dinner, I love Huevos Rancheros for so many reasons. Huevos Rancheros, at its most basic level, is eggs cooked over easy and layered on tortillas with salsa and cheese. Our version of this classic Southwestern meal is a “fully loaded” Huevos Rancheros and it will keep you full for hours.

Blondies are the dessert recipe that everyone needs to have in their back pocket. When you combine the texture of a brownie with the deep flavors of the ultimate chocolate chip cookie, you get a rich and chewy treat that everyone loves and these Coconut Blondies are a huge favorite!

I made Pan Fried Chicken for the first time about ten years ago and I haven’t stopped making them since then. This Southwest Chicken is a favorite with the whole family.

What I’m CRAVING: Have you heard of a Sushi Bake?! My friend Rebecca shared one this week and I’ve been dreaming of it for days now. What’s not to love about all the awesome deliciousness of a California roll in an easy casserole dish?? I am absurdly excited about this!

What I’m READING: Rilla of Ingleside by L.M. Montgomery – The final book in my beloved series is set during World War I. The children we’ve grown to love are headed off to war or remaining home to serve as they’re able and to wait and pray.

This book has my heart more than any of the others. I read it for the first time when I was about 10 years old and cried buckets of tears over it then. Re-reading it now, as a parent who can’t even imagine my own sons heading to war, it ripped my heart again.

Knowing what was coming from page to page and knowing in advance which lives would be sacrificed and where the victories would be was bittersweet. From Dog Monday to Bruce Meredith, Courcelette to Verdun, I cried, smiled, sighed, and laughed so many times while reading this final book.

Every character in the series (and yes, there are so very many) helps create a world that I love visiting every time I open these books.

I’m going to guess that you’ve caught on to my excitement over my past eight weeks of reading happiness, and yes, the Kindle version of the entire Anne of Green Gables series is still just $.49 on Amazon. Pure reading joy is still a guarantee for less than a dollar.

    Hi, We loved the recipe “Sausage Egg Roll in a Bowl”. But prepared it a bit differently, my husband isn’t one for heat, so omitted the Chili paste, & added Hoisin Sauce instead, and had low-sodium Soy Sauce on the table. I also had diced Gr. Bell pepper in the mix. Next time, I may add diced mushrooms, some shavings of carrots; whatever I have in the veg. container. The WonTons on top made it a perfect quick one pan dinner! Thanks, love your recipe ideas, Connie Dunfield
