Welcome to the weekend, my friends! How’s January treating you so far? It’s been pretty chilly here, but I’m still enjoying spending a few minutes walking outside each day. The fact that I live in my favorite place on earth definitely motivates me to get outside and appreciate it.
ON THE BLOG this week: The Easiest and Tastiest Chili Recipe is filled with beans, tomatoes, corn, and plenty of Mexican spices. I’ve made this with meat and without and it’s delicious both ways.
Cheesy, slightly spicy, and generously filled with enough chicken to make it hearty enough for a meal, this Cheesy Sriracha Chicken Dip is always a hit.
Light and flaky, slightly rich and sweet from the cream and the berries, my family always goes nuts over these Strawberries and Cream Biscuits and they disappear fast every time I make them.
What I’m CRAVING: This Queso Fundido looks so good! Chorizo and cheese is a combination that every tortilla chip wants to be dipped into, right?
My FAVORITE THING this week is my little heater in the office. I bought ours a few years ago at Costco and it’s still going strong. This works better than any of the heaters we tried in the past – and we tried quite a few!
What I’m READING: Anne of the Island by L.M. Montgomery. Friends, you’ll just have to love Anne with me for the next few weeks. I’m deeply immersed in her world and enjoying every page. Anne is away at college now enjoying new friendships and even a romance. I grinned to rediscover Patty’s Place and to see the girls settling into it.
The icing on the cake with this book was knowing what was in store for the lovely indecisive Philippa. When she met her Rev Jo, my smile was enormous. Is there anything better than re-reading a truly wonderful series of books? I look forward to picking up my kindle every night.
