Welcome to the new year, my friends! There’s a quiet whisper of hope in the air right now and my prayer is that this will be a wonderful year for each of us.

ON THE BLOG this week:  White Chicken Chili is a creamy soup filled with tender chunks of chicken, soft white beans, green chile, and plenty of spices. Truly more soup than chili, this has been one of our favorite rainy day meals for several years now.

Chewy oats, peanut butter cookie dough, brown sugar, and butter all combine to create these chocolate and m&m filled snackable Monster Cookie Dough Bites.

Chicken, fresh grapes, and crunchy walnuts are tossed in a tangy-sweet poppy seed dressing to make this Poppyseed Chicken Salad. Served on top of a garden salad, wrapped in a tortilla, sandwiched inside a croissant, or simply eaten with a fork, this is a chicken salad for any occasion.

What I’m CRAVING: This Cream Puff Chocolate Eclair Cake sounds so very good! With all those creamy layers over crisp buttery pastry layers, what’s not to love?

My FAVORITE THING this week is this Christmas mug that Sean found for me. I immediately washed and filled it with coffee as soon as I opened it on Christmas morning. It just makes me grin. (I just might keep in the cupboard all year instead of packing it away with the Christmas things!)

What I’m READING: Light from Heaven by Jan Karon. This is the 9th book in the Mitford series and the series continues to be a joy to read. I closed this book already looking forward to what’s next for the series. I’m so glad that there are 15 books to savor. (I’ve forced myself to wait a bit between each of these books so that I don’t blow through them too quickly.)

In this book, Father Tim and Cynthia are farm-sitting for a year when he’s called to re-open a small mountain church. The new characters introduced made me laugh and sigh. It was a delight to see Dooley and Lace becoming adults along with getting to know Sammy at last.

What I’m WATCHING: I finished the third season of Chuck and I’m still loving the series. I’m absolutely hooked on these characters. I’ve laughed, cried, and laughed again over this season. Fingers are crossed that the rest of this series continues to be this good.
