Welcome to the weekend, my friends! How was your Thanksgiving? Ours was very laid back, delicious, and memorable. I will happily be eating the leftovers for days and I will also be making a big pot of Creamy Turkey Noodle Soup this weekend!

ON THE BLOG this week: Honey Mustard Poppyseed Dressing is tangy, slightly tart, and sweet at the same time. This dressing is perfect on a crispy chicken sandwich, tossed in a slaw, or with pretty much any salad.

Pomegranate Guacamole is a spicy, creamy, fresh as can be guacamole that is likely to turn your idea of what guacamole is supposed to be completely upside down. If you are anything like me, you’re reading the title of this guacamole recipe and you’re likely about to scroll quickly past. But give me a quick moment to change your mind.

Creamy, smooth batches of chocolate and peanut butter fudge are swirled together to create this Chocolate Peanut Butter Swirled Fudge. Similar to the Buckeye Fudge that has been so popular, this is a little simpler and can be made even more easily. I predict that you’re going to love it every bit as much.

What I’m CRAVING: My friend Tricia’s Viennese Whirls caught my eye this week and they look mouth wateringly delicious! I adore fancy little sandwich cookies and I definitely don’t make them often enough. These will be lovely on any dessert tray this Christmas.

My FAVORITE THING this week is this powered floor mop. A while back I gave up on finding a steamer or any kind of powered mop that I’d be able to use on real hardwood floors. Then my friend Phi raved about her mop. (And I watched her adorable 3-year-old mop the floors with it!) So, I decided to try it.

I’m here to tell you that the mop absolutely rocks. I love this darn mop. It literally propels itself across the floors. It works like a dream on hardwood (it doesn’t leave the floors wet!), tile, laminate, pretty much anything. I’m not typically someone who gets excited about cleaning, but this mop makes mopping the floors so easy! (And for just about $120? That’s a serious win!)

What I’m WATCHING: My Santa. If a Christmas movie makes me tear up in the end, I call it a win, no matter how cheesy it is. And this one? Single mom meets the son of Santa Claus as he’s searching for a wife. What’s not to love? It’s suuuuper cheesy and it definitely made me cry a few happy ridiculous Christmas tears. 

Insert mini-rant: if you’ve ever baked cookies, you just might throw up your hands at the ridiculousness of that particular storyline. Do actors/actresses never bake or cook in real life? Sometimes it’s just unreal how horribly those things are portrayed. But at least it makes me laugh.

What I’m READING: About My Mother: True Stories of a Horse-Crazy Daughter and Her Baseball-Obsessed Mother: A Memoir by Peggy Rowe. While I read Peggy’s books out of the order in which she wrote them, they both stand alone as excellent light-hearted reads. Peggy started writing her first book at 80 years old and I hope that she continues writing many more books. I read this book in one sitting and enjoyed it from the first paragraph.

    I am making your creamy turkey soup for dinner tonight! In the past I have cooked a huge turkey and sometimes the carcass is hard to boil. This year I cooked a 12 pound turkey and made the stock that evening while I cleaned up. Yesterday, I was over with my mother-in-law writing her checks (she is going blind) and she wanted me to take her carrots she hadn’t used. I will be using rotini pasta cause I have several packages. It is 3pm here and I will start cooking on one hour. Can’t wait for dinner!

    A really easy-come together quick is meatballs in gravy. Don’t judge, but it is a package of frozen meatballs, a jar of beef gravy, a can of cream of mushroom or celery soup. Cook the meatballs. Mix gravy and soup together and add to meatballs. Serve over white rice or egg noodles. Add a salad to make a yummy meal. My husband loves the turkey meatballs from Trader Joe’s and I usually have them in my freezer. A little sad story: twenty four years ago, I made a fabulous chicken dinner for my parents who were visiting. I didn’t realize the burner was still on and I set the glass dish with the chicken on the burner and the glass exploded. I had meatballs in the freezer and made the meatball dish. It was a hit and the last dinner I was able to make for them. They died in a car accident on their way home the next day. It was a few years before I made that dish, but my husband really loves it.

    I love all the ideas people have suggested……especially the grilled cheese and tomato soup–has to be Campbells or the tomato soup from my local Safeway. I couldn’t find my post. It was frozen meatballs with gravy (jar of beef gravy and cream of mushroom or celery soup combined). Pour over egg noodles or white rice. Add salad and you have dinner.

    Again, love the recipes and the blog!

    When all else fails I make burritos. You can pretty much put any leftovers on your tortilla, add lots of cheese & salsa, roll it up and bake or air fry. Voila! Dinner.

    I have a recipe for taco chili that is so easy and healthy. We do it in the crockpot. It’s so yummy that we eat it a lot in the winter especially.

    We make the sheet pan chicken with vegetables all the time. We have used sweet potatoes, regular potatoes, green beans, cauliflower, etc. It’s a family favorite.

    My favorite quick dinner consists of a sheet pan dinner – chicken breast, kielbasa. butternut squash, and whatever other root vegetables I have on hand. Love to include garlic cloves and seasoning and put in oven… 35-45 minutes later you have dinner!!!

    My current favorite easy dinner is a locally made crab cake (I live in Maryland) that I can easily stop and get after work and serve as crab cake sandwiches with a quick homemade coleslaw. Yum!

    My favourite dinner to make is my Italian Sausage Braid. It is easy but looks impressive and is so delicious! Basically it starts with puff pastry, there is a layer of Italian sausage mixed with Italian Breadcrumbs and egg. then a layer of lightly fried onion, garlic and fresh basil. then, some Mozzarella cheese, sliced tomatoes, and more cheese. then it is all covered with braided puff pastry and baked in the oven for a half hour. Delicious!

    I so look forward to receiving your recipes and now I have to try these cookies!

    My favorite easy dinner is one I grew up with. Pan fried pork chops, white rice, Green Giant kitchen sliced green beans drained and heated with a small can of tomato sauce, and applesauce. Comfort food at its best!

    I recently stumbled upon you on facebook, I love your recipies. My favorite easy meal is fried canned wild Alaskan Salmon patties. made without bread or crackers, as I am gf. They are the yummiest & really make you feel full & content. There is mayo, parmesan cheese, onion, dill & pepper in them, so simple. Then it’s any side I find in the fridge, vegetables & salad. So easy, you can make it for any meal, depending on your mood.

    My favorite is an old recipe from Kraft Foods. You put a roast in the crock pot, mix together some A1, water, and a packet of onion soup mix, then cover with potatoes, onions, and carrots. Let it cook all day and voila! It is so delicious and flavorful, but doesn’t taste like A1, and it’s tender. It is easy and everyone always loves it.

    My very favorite super easy weeknight dinner is spaghetti with meat sauce and garlic bread. YUM!!!! I could eat it much more often than my family can, so I try not to overdo it. However, I “accidentally” make way too much and then I get to have the leftovers for lunches. 🙂
