Welcome to the weekend, my friends! How was your Thanksgiving? Ours was very laid back, delicious, and memorable. I will happily be eating the leftovers for days and I will also be making a big pot of Creamy Turkey Noodle Soup this weekend!

ON THE BLOG this week: Honey Mustard Poppyseed Dressing is tangy, slightly tart, and sweet at the same time. This dressing is perfect on a crispy chicken sandwich, tossed in a slaw, or with pretty much any salad.

Pomegranate Guacamole is a spicy, creamy, fresh as can be guacamole that is likely to turn your idea of what guacamole is supposed to be completely upside down. If you are anything like me, you’re reading the title of this guacamole recipe and you’re likely about to scroll quickly past. But give me a quick moment to change your mind.

Creamy, smooth batches of chocolate and peanut butter fudge are swirled together to create this Chocolate Peanut Butter Swirled Fudge. Similar to the Buckeye Fudge that has been so popular, this is a little simpler and can be made even more easily. I predict that you’re going to love it every bit as much.

What I’m CRAVING: My friend Tricia’s Viennese Whirls caught my eye this week and they look mouth wateringly delicious! I adore fancy little sandwich cookies and I definitely don’t make them often enough. These will be lovely on any dessert tray this Christmas.

My FAVORITE THING this week is this powered floor mop. A while back I gave up on finding a steamer or any kind of powered mop that I’d be able to use on real hardwood floors. Then my friend Phi raved about her mop. (And I watched her adorable 3-year-old mop the floors with it!) So, I decided to try it.

I’m here to tell you that the mop absolutely rocks. I love this darn mop. It literally propels itself across the floors. It works like a dream on hardwood (it doesn’t leave the floors wet!), tile, laminate, pretty much anything. I’m not typically someone who gets excited about cleaning, but this mop makes mopping the floors so easy! (And for just about $120? That’s a serious win!)

What I’m WATCHING: My Santa. If a Christmas movie makes me tear up in the end, I call it a win, no matter how cheesy it is. And this one? Single mom meets the son of Santa Claus as he’s searching for a wife. What’s not to love? It’s suuuuper cheesy and it definitely made me cry a few happy ridiculous Christmas tears. 

Insert mini-rant: if you’ve ever baked cookies, you just might throw up your hands at the ridiculousness of that particular storyline. Do actors/actresses never bake or cook in real life? Sometimes it’s just unreal how horribly those things are portrayed. But at least it makes me laugh.

What I’m READING: About My Mother: True Stories of a Horse-Crazy Daughter and Her Baseball-Obsessed Mother: A Memoir by Peggy Rowe. While I read Peggy’s books out of the order in which she wrote them, they both stand alone as excellent light-hearted reads. Peggy started writing her first book at 80 years old and I hope that she continues writing many more books. I read this book in one sitting and enjoyed it from the first paragraph.

    My favorite weeknight meal… sliced yellow squash and/or zucchini, sautéed in a combo of butter and olive oil. Add browned ground beef, season with granulated garlic, salt and pepper and cover with grated cheese. Heat until cheese is melted. Yum!

    So you want my easy evening meal idea? Hmm, after a crazy busy day my go-to is Omelets! I always have eggs and a block of cheese in my refrigerator! And if I have leftovers or doggie bags in my frig… well, in they go! Omelets are best when stuffed full of fillings and cheeses! I like to toast a slice of rustic bread, too. Then I’m pretty close to heaven! I feel like I become mind and soul-balanced at the end of a pretty hectic day! Food can do that to us… balance our minds and souls. True comfort! So make it fast and make it healthy! Good Night!

    Wow, that’s a tough one. I love food. And I love easy dinners! Probably my all time favorite is homemade soup. Delicious and comforting, and you can pretty much always make soup with whatever is on hand!

    My easiest weeknight meal is to have hamburger patties in the freezer and a bag of french fries. Add a salad or just carrot and celery sticks and you’re good to go.
