Welcome to the weekend, my friends! We have rain in the forecast this weekend and I’m so very happily here for it. Hearing the rain on the roof and windows just makes me so darn happy. After spending so much of my life in the desert, I’m guessing the thrill of a rainy season isn’t going to fade soon.

ON THE BLOG this week: Sliced fresh apples, with a drizzle of peanut butter and honey, topped with a handful of crunchy chocolate peanut butter granola adds up to a plate of Crunchy Apple Nachos.

The BEST Chicken Tetrazzini begins with chicken, mushrooms, and pasta that is tossed together with a creamy, garlicky sauce. Then everything is sprinkled with just a handful of cheese and baked long enough to melt it all together. Served with warm bread and a salad, this meal is a hit every time.

These Dark Chocolate Whole Wheat Brownies have everything I dream of in my chocolate desserts. They are chewy, cakey, fudgy, gooey, and delicious! Plus, they are perfect with fresh strawberries and a scoop of ice cream. Is there a form of chocolate in the world that isn’t lovely with fresh berries?

What I’m CRAVING: This One Pot Chicken and Dirty Rice looks like the perfect hearty meal for my crew. I’m a big fan of skillet meals that include salty bites of kielbasa (like this One Pot Jambalaya Pasta).

My FAVORITE THINGS this week are these adorable Thanksgiving candle holders. I don’t typically do much fall decorating, but I simply could not resist these for the table!

What I’m READING: Fresh Eggs Daily: Raising Happy, Healthy Chickens…Naturally by Lisa Steele. I found Lisa’s website Fresh Eggs Daily when our baby chicks first arrived this past spring. All of the info has been immensely helpful as we’ve been building the coop and setting everything up for our chickens. The book is a wealth of advice for any new (or likely even more experienced) chicken keepers. I can hardly wait for the first eggs to be laid!

    Yellow Gloss so I won’t feel so gloomy this fall/winter during our consistent gray days in the Pacific Northwest. Putting these on would surely put a smile on my face and make me feel like sunshine as I walk to my mailbox 1/3 mile away.

    I love the Original Black Glossy, I’m for anything shiny love patent so would love to have a nicer pair of boots for rainy days!!

    I had to try those Crunchy Apple Nachos and they did not disappoint! I am so glad you introduced us to Fresh Eggs Daily as I have some chickens and love to find good resources and blogs. Last but not least, I would love the Military Red in 11 boots for my daily trips to visit my chooks and gather their eggs!
