Welcome to the weekend, my friends! I’m planning to curl up on the couch with a book this morning, drink some coffee with fancy creamer, and basically enjoy being as relaxed as possible for as long as possible. Oh! And there’s a local corn maze that we might take the kids to check out depending on the weekend’s weather.

ON THE BLOG this week: Peanut Butter Chocolate Chip Granola? Yes, please! What’s not to love about peanut butter, chocolate chips, and a handful of irresistible toffee bits all mixed up in one supremely easy granola recipe?

Loaded with our favorite Mexican flavors; this {10 Minute} Southwest Chicken Soup is slightly spicy with chunks of tomatoes, corn, black beans, and tender chicken. I topped our steaming bowls of soup with a handful of shredded cheese and the entire family gave this meal two thumbs up.

Light and fluffy, absolutely Perfect Pancakes are a recipe that everyone needs to have in their pocket. I’ve been making this pancake recipe for more than 10 years now and every single person who has tried these pancakes has loved them.

What I’m CRAVING: I had a conversation with my friend Rebecca, a.k.a. the grandma-in-training-pudding-lover, about Tapioca Pudding a while back and I mentioned that I’ve never tried it. (At least not that I can recall?) So, now I’m craving classic tapioca pudding and Rebecca’s chocolate tapioca pudding as well. Apparently, it’s time to make some pudding.

My FAVORITE THING this week is my New Mexico Pinon Coffee. It’s been too long since I visited my sister in Albuquerque and was able to fill my suitcase with coffee to take home. I was thrilled to find it online this week sold by my favorite NM coffee store.

What I’m READING: I re-read the Hunger Games trilogy and I enjoyed the series all over again. The benefit to being a speed reader is that re-reading favorites pretty much never gets old. It’s also a lot of fun to introduce my kids to these books as well. I’m waiting for my middle son to read the series now so that we can watch the movies again with him. (We’re sticklers about reading the books before the movies whenever possible.)
