Ohio 220

Welcome to the weekend, my friends! We’ve had an absolutely beautiful week here in Ohio. I’ve spent time out on the porch every night and it has been glorious.

ON THE BLOG this week: Fresh strawberries and blueberries are tossed in a light balsamic vinaigrette and then sprinkled with fresh basil to make this summery Balsamic and Basil Berry Salad.

This Mexican Fried Rice is filled with ground beef, bell peppers, black beans, corn, and green chile. Served on its own, as the recipe is written, this is a one-pan meal that everyone loves. Get creative and top a salad, fill tacos, or stuff burritos with the fried rice for a fun new meal each time you make it.

Perfect Rice Crispy Treats are soft and chewy with plenty of ooey-gooey marshmallow goodness. I don’t like my rice krispy treats to scrape the roof of my mouth or become crunchy. So, in short, gooey rice crispy treats = my happy place.

What I’m CRAVING: These Sheet Pan Shrimp Fajitas by No. 2 Pencil caught my eye this week and they sound so good!

My FAVORITE THINGS this week are my flip flops. I have several pairs of these that I bought last year and I love them even more now than I did when I bought them. Availability on Amazon comes and goes, but I highly recommend them and they’re worth watching for. I can wear them all day long with zero issues and my feet have never once hurt at the end of a day wearing them.

What I’m READING: The Forgotten Garden by Kate Morton. The book opens with a 4-year-old girl abandoned on a ship headed for Australia in 1913. She arrives completely alone with nothing but a small suitcase containing a few clothes and a single book of fairy tales. She is taken in by the dockmaster and his wife and raised as their own.

The story is told from multiple perspectives, a hundred years apart. I didn’t expect it to be the all-engrossing mystery that it is and I found I could not put it down. I stayed up way too late reading it and woke up with all of the characters on my mind. I don’t typically love books told between different timelines and characters, but this one is an exception to my rule for that. I loved it all.

Wishing you a beautiful week full of little things that make you smile!
