Welcome to the weekend, my friends! We finally have sunshine today, so I’ll be spending the day cooking and photographing recipes to share with you. (Bonus for us – we’ll eat well all weekend.) What are you up to today?

ON THE BLOG this week: Fresh strawberries are tossed with sugar and cinnamon before being layered under a sweet biscuit crust to make this Strawberry Cobbler. If you’re a fan of classic strawberry shortcake, this berry-filled dessert is going to thrill you.

Inspired by a lucky bit of leftovers in the fridge, fresh corn and tender potatoes are combined with a creamy spicy sauce to create this Mexican Street Corn Potato Salad.

This Tangy Pasta Salad is filled with crunchy bell peppers and onions, olives, and sweet tomatoes. Tossed in a light oil and vinegar dressing this recipe is great for summer parties.

What I’m CRAVING: This Grilled Vegetable Salad by A Farmgirl’s Dabbles looks incredible. I’m thinking I’ll toss a bunch of vegetables on the grill along with the chicken skewers I’m planning to make this weekend.

My FAVORITE THING this week is this sunless tanner. I am the fairest of the fair and I’ve long since given up on being able to tan even a shade of cream or off white. It’s a ghost or lobster in my world. As a result of that, I’ve tried countless sunless tanners over the past 20+ years and this one makes me very happy.

I basically just want enough color to take the glare off of my legs (TMI?) and I’m not trying for any kind of golden tan. After spending 40 years in the desert southwest and enjoying very very warm summers, shorts will forever be part of my life. This tanner makes wearing shorts much more fun.

What I’m WATCHING: Stand and Deliver. I watched this for the first time 20+ years ago and it is still every bit as excellent as the first time I watched it. When I saw it pop up on Netflix, I watched it that same day – to make sure it was what I remembered – and I’m planning to watch it with my boys this weekend.

What I’m READING: The Thorn Birds by Colleen McCullough. Written in 1979, this book is considered by many to be “one of the most beloved novels of all time.” So, when it was mentioned to me a few weeks ago, I promptly placed a hold at the library. Maybe in the end, this all boils down to the fact I’m rarely a fan of “forbidden love” stories, so this book simply depressed me.

I was determined to finish it, so I did read through to the end, but I lost interest multiple times and nearly stopped reading it altogether more than once. I actively disliked most of the characters and the few that held my interest even a bit were often done away with quickly. If you are someone who either recommended it to me or if you loved the book, I’d love to hear from you. Am I missing something? Or was the tv mini-series that much better? Because right now? I don’t recommend it at all.
