Welcome to the weekend, my friends! We were rained out of our hiking plans – a.k.a. wandering around a new area last weekend, so that’s back on the agenda for today. Here’s hoping for sunshine!

ON THE BLOG this week: Tender bites of chicken, sweet grapes, pasta, are combined and tossed with a creamy poppyseed dressing to make this simple Poppyseed Chicken and Grape Pasta Salad.

Salami, mozzarella, pepperoncini, olives, red onions, and potatoes are tossed with a garlicky vinegar and oil dressing to make this tangy Antipasti Potato Salad.

Chocolate Chip Toffee Bits Ice Cream is exactly that – a homemade vanilla ice cream fully loaded with miniature chocolate chips and toffee bits. And it’s pretty incredible.

What I’m CRAVING: Home & Plate’s Fried Green Tomatoes are topped with mozzarella and balsamic and they sound pretty incredible. I haven’t had fried green tomatoes in years and my mouth is watering just thinking about them.

What I’m READING: The Beekeeper of Aleppo by Christy Lefteri – It took me a few chapters to really get into this book, but after that, I was hooked. This is the story of a refugee couple escaping from Syria. I appreciated the way the book switched from present-day to past, giving you hope for their future while not softening the horror of their journey. This book was highly recommended by so many people I lost count. It isn’t a feel-good read, but it’s an excellent one nonetheless.
