Baby romaine and red leaf lettuces are the base for this vegetable-packed salad. Topped with chicken and black beans, then drizzled with a honey mustard poppyseed dressing, this salad made me very happy today!
I might as well confess that I’m a bit obsessive about salad dressings. I tried three other versions before this one and this is a winner.
I went to the Farmer’s Market this weekend and came home with so many great new vegetables to try! This week, in my CSA box, I had Watermelon Radishes.
Have you heard of them before? I hadn’t. They are so pretty! I’m not normally a big fan of radishes, but these are different. The flavor is mild and almost sweet. As you can see from the picture below, they look like miniature slices of watermelon when you slice them.

The watermelon radish is unbelievable! I have never seen one. Did it taste like a regular radish, or was it more mild?

Those radishes would be worth using just for the cute quotient!

How interesting Mary – my eyes immediately went to the radishes and I said to myself "what are those?" I've never seen them before! I am now hunting these beautiful vegetables – so I hope they are available in the east too! P.S. The muffin papers were made with 5×5 inch pieces of parchment paper. So easy and I just love them instead of muffin wrappers. Have a great week. Oh by the way – this sald looks so good. I could eat this everyday!

A lot of colors and textures jammed into that one, it looks like my kind of salad – one that doesn't leave you hungry 1 hour later.
