
Chewy bites of cookie dough filled with tart dried apple bits and cranberries turned out to be a total win with my family. I loved this variation on the typically very sweet cookie recipes that abound in my house. Don’t get me wrong, the coconut makes these plenty sweet, but they aren’t loaded with chocolate or overwhelmingly sugary.
These sweet treats were inspired by Nature Box that I received earlier this month. All three of my boys really loved the Mango Almond Bites and the Fruit Medley. My youngest son surprised me by liking the Plaintain Chips so much; they were a uniquely savory twist on classic sweet banana chips. I recommend making these Cookie Dough Bites the day before you want to eat them. The flavors meld and the texture is perfect after a night in the fridge. These cold bites of cookie dough disappeared way too fast. It’s a good thing I only made a small batch. I couldn’t keep my hands off of them!

Coconut Oatmeal Cookie Dough Bites
Ingredients
- ½ cup butter softened
- ⅓ cup light brown sugar
- ½ teaspoon vanilla extract
- ¼ teaspoon baking soda this is optional, but it really does add to the “cookie dough” flavor
- 1 cup quick cooking oats *
- ⅔ cup coconut
- ⅔ cup tart and tangy dried fruit mix
- * you can use old fashioned oats as well just pulse them a few times in the blender or food processor to break them into smaller pieces. Make sure that the total amount used is still 1 cup after processing.
Instructions
- Cream the butter, sugar, vanilla and baking soda together until smooth. Stir in the oats and then the coconut and fruit mix. Scoop into small balls and roll between your hands to smooth them. Place in an airtight container and refrigerate 8 hours before serving. Enjoy!
