Coconut Milk Banana Smoothie Ice Cream recipe by Barefeet In The Kitchen

This smoothie was an awesome surprise. I had a bit of coconut milk left in the fridge from making ice cream and I decided to toss it into a quick smoothie for the kids.

This was SO very good and incredibly simple, I’ve already made it again. This tasted better than any milkshake I’ve had in years. I can see this being an easy dessert for many summer nights in the future.

I'm keeping this tucked away for the blessed day when my baby can eat something other than sweet potato and oatmeal but dairy is still a NO GO. (Or I'll make it for breakfast tomorrow)

Coconut milk is not diary, its extracted from the coconut using water. But given the name because of its similarity in color and texture to milk.

So yummy! I did half the ingredients for my toddler and we LOVED it. Thanks so much!5 stars
