This smoothie was an awesome surprise. I had a bit of coconut milk left in the fridge from making ice cream and I decided to toss it into a quick smoothie for the kids.
This was SO very good and incredibly simple, I’ve already made it again. This tasted better than any milkshake I’ve had in years. I can see this being an easy dessert for many summer nights in the future.
Coconut Milk Banana Smoothie Ice Cream
Servings: 1 serving
Ingredients
- 1 cup Thai coconut milk refrigerated and thickened
- 2 bananas frozen and cut into several pieces
- drizzle of honey to taste - about 1 tablespoon
Instructions
- Place milk and bananas in the blender and puree until smooth. Add honey to taste and pulse to combine. Serve immediately for a soft serve milkshake or freeze for a firmer ice cream. Enjoy!

Coconut milk is not diary, its extracted from the coconut using water. But given the name because of its similarity in color and texture to milk.
