Mojo Chicken Burrito Bowls recipe by Barefeet In The Kitchen

Everyone in my family is a fan of Chipotle’s burrito bowls. As a result, we’ve gotten into the habit of making different versions of them at home for a quick and easy (and delicious!) weeknight dinner.

Simply choose your favorite ingredients and layer them onto your plates. This is a great way to use bits of leftovers in the fridge as well.

Mojo Chicken Burrito Bowls

Ingredients 

  • Romaine lettuce or your favorite crisp variety, roughly chopped
  • Rice brown or white
  • Black beans or your favorite variety
  • Mojo chicken chopped or shredded into bite size pieces
  • Corn fresh, frozen or canned is fine
  • Tomatoes chopped
  • Cheddar or pepper jack cheese shredded
  • Chopped avocados
  • Salsa
  • Sour Cream or Southwestern Po'dunk Sauce
  • Smoked Chipotle Tabasco sauce this is my husband's personal favorite and it does make a difference

Instructions

  • Layer the lettuce, rice, beans and chicken onto plates and then top with your favorite ingredients. Enjoy!

    We did rice bowls this week because I did some black beans in the crock pot. The mojo chicken would add lots of flavor. I will have to look for the chipotle Tobasco sauce..I always feel like a need a different type of heat in my rice bowls and that sounds great.

    Oh, how I miss Chipotle! The original restaurant (before there was a chain) was/is a few blocks from the music school where I worked for many, many years – and we were all HUGE fans. Unfortunately, then came food allergies and my inability to eat anything with cilantro in it, and out went Chipotle. Sigh. It's probably just as well, because one burrito probably had enough calories to last the average human for several weeks, but still I miss the yumminess… Perhaps I'll give your recipe a try…
